Pomegranate, Walnut, Rocket & Ricotta Salad


- 1 cup of Walnuts (baked in the oven at 180 degrees until brown ~ 5-10 mins)
- 3/4 a large pomegranate
- Fresh rocket
- 1 1/2 cups ricotta
- drizzled with extra virgin olive oil

Just throw all ingredients together and mix well.

I love pomegranate in salads. I've made a lot during the past few months but I've lost a lot of my photo files. Your salad sounds great.

Thank you. Yes I love pomegranates, and try to make the most of them while they are in season. Simple salads are the way to go.

I did a fantastic one the other week, it was grilled peach, proscuitto, rocket and balsamic and it was amazing, but I didn't take good photos so will have to do it again to show you.
